Farmed Atlantic salmon is the fish that teaches home cooks confidence — the high fat content means it forgives imprecision that would ruin a leaner fish. The cold-pan method for crispy skin is the professional technique worth mastering: place the fillet skin-side down in a cold pan, add a tablespoon of neutral oil, turn heat to medium-high, and hold. Do not touch or move the fillet. The fat renders from below slowly, crisping the skin evenly without burning. When the flesh has turned opaque two-thirds up the side, flip once for thirty seconds and immediately turn off the heat. The residual heat finishes the cooking. Rest for two minutes. For gravlax — one of the greatest cured preparations in the world — combine 150g each of coarse salt and sugar with a large bunch of chopped dill, cracked white pepper, and optionally a tablespoon of aquavit. Pack over a skin-on fillet, wrap tightly in plastic, and refrigerate under a weighted board for 48 hours. Slice paper-thin on a bias with a long, flexible knife. Serve with crème fraîche, capers, shaved red onion, and dark rye.

A generally moderate-concern fish. PCB levels in farmed salmon vary by origin and feed — Norwegian and Scottish fish historically higher, Chilean generally lower. For sensitive populations consuming salmon regularly, choosing wild Pacific salmon when available is advisable. For most adults, farmed salmon 1–2 times per week is reasonable.

PCBs may be present depending on feed source and farming region. Mercury is generally low. European-sourced farmed salmon may have slightly higher PCB levels than Chilean or Alaskan-origin. Overall risk is moderate and manageable.
