Rockfish — rock cod, snapper on old California menus — is the workhorse white fish of the Pacific, and it excels in exactly the places a mild fillet should. Fish tacos first: season with cumin, chili, garlic, and lime, sear hard or beer-batter and fry, then serve in warm corn tortillas with crema, cabbage, and salsa verde. For whole small rockfish, the Cantonese steam is unbeatable — score, steam eight minutes over hard-boiling water, then pour over soy, sesame oil, and a ladle of smoking oil with ginger and scallion. Because the flake is finer than halibut, use a light hand and pull it early; the flesh keeps cooking on the plate. Ask which species you're buying — an older yelloweye and a fast-growing black rockfish are very different fish on the risk side.

Safety Context

Generally lower concern, with meaningful variation across the group. Fast-growing species such as black and widow rockfish are low; long-lived deepwater species such as yelloweye and canary rockfish accumulate more mercury and are also managed for conservation. West Coast state agencies publish species-specific guidance.
