Pumpkinseed is as pretty to look at as it is to eat — vivid orange and turquoise, the jewel of inland lakes. In the kitchen, treat it like bluegill: pan-fry whole fish in hot oil with a cornmeal crust, or fillet and sauté in clarified butter with fresh thyme and a few thin slices of garlic. The mild, clean sweetness needs very little: a finishing squeeze of lemon, a scattering of fresh herbs, a glass of something cold. For a more composed plate, serve two or three fillets fanned over a warm lentil salad dressed with sherry vinegar and topped with crispy capers.
