Idaho farmed rainbow trout is one of the best arguments for responsible aquaculture — clean, cold water, consistent quality, low environmental impact, and a fish that actually tastes like something. Trout almondine is the classic for good reason: dry the skin-on fillet, season with salt, and sear skin-side down in a mix of butter and neutral oil over medium-high heat until the skin is crisp and the flesh has turned opaque two-thirds up the side. Flip for thirty seconds, remove. In the same pan, add a generous knob of butter and a handful of slivered almonds; cook over medium heat until the almonds are golden and the butter is brown. Add a tablespoon of lemon juice, swirl, and pour directly over the fish. Finish with fresh flat-leaf parsley. For whole trout: stuff the cavity with sliced lemon, fresh tarragon, and a few knobs of butter, wrap in foil, and roast at 375°F for twenty minutes. Open the foil for the last five minutes to let the skin color. Serve the whole fish at the table.
