Yellowfin tuna is the fish that taught American cooks the value of restraint. A block of sushi-grade yellowfin treated right is one of the most satisfying things a kitchen can produce. For a seared rare preparation: season the loin aggressively on all sides with salt, cracked pepper, and sesame seeds. Get a cast iron or carbon steel pan ripping hot — this needs to be the hottest the pan will go. Sear each face for exactly sixty seconds, using tongs to roll the loin so every surface gets direct contact. Rest for two minutes before slicing across the grain into half-inch slices. The center should be deep red and cool; the outside should have a crisp, sesame-studded crust. Serve with pickled ginger, wasabi, a soy-sesame dipping sauce, and thinly sliced scallion. For room-temperature presentations, a ponzu-dressed crudo with avocado, radish, and microgreens needs nothing cooked at all.
